La Maison du Whisky bottled this 12 year old 2011 Kilchoman as a 100% Islay single cask, made entirely from the distillery's own barley, from ex-Bourbon cask 411. An outturn of 240 bottles for France. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.
Grown, malted, distilled and bottled at Rockside Farm, this is the barley to bottle philosophy from a single cask. The own-grown barley is lightly peated and matured in a single ex-Bourbon cask.
Bottled at its natural cask strength of 53.5%. The ex-Bourbon gives vanilla and citrus while gentle peat phenols carry the smoke. The recorded note is a rubbery edge over the farm spirit. A 100% Islay single cask from a French specialist.
