Description

This 11 Years Old is a Kilchoman 100% Islay from 2011, made entirely from the distillery's own barley and matured fully in Oloroso sherry. The 100% Islay range is the founding philosophy, grown and made on the one Islay farm. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.

Grown, malted, distilled and bottled at Rockside Farm, this is barley to bottle in full. The own-grown barley is lightly peated and matured in Oloroso casks across eleven years.

Bottled at its natural cask strength of 50%. The Oloroso gives dried fruit, melanoidins reading as fig and raisin, while gentle peat phenols carry the smoke. The recorded notes run to smoke, chocolate, dried fruit, leather, a sherried character and tobacco. The farm philosophy aged in sherry.
