Description

La Maison du Whisky bottled this 11 year old 2012 Kilchoman for its Collection Foundations, from ex-Bourbon cask 623. An outturn of 235 bottles. Founded by Anthony Wills in 2005 at Rockside Farm, Kilchoman is the only farm distillery on Islay.

The distillery malts on site and bottles on the farm, keeping the whole process in one place. Matured in a single ex-Bourbon cask over eleven years, the wood frames the peated spirit.

Bottled at its natural cask strength of 54.5%. Citrus and vanilla rise from the ex-Bourbon cask while peat phenols bring the smoke. A bourbon single cask from a French specialist.
