This Glen Moray was bottled by the Highland bottler Adelphi, a 22 year old, distilled in 1995, from cask 7785, bottled at 53.2%, one of 292 bottles. Glen Moray is a Speyside single malt and a pioneer of wine cask finishing. It closed in 1910 and reopened in 1923 under Macdonald and Muir of Glenmorangie.

Made on River Lossie water and condensed in shell and tube condensers, building a light, accessible character of orchard fruit and vanilla. It was finished in an Oloroso cask, the wood layered over the light malt. Through the evaporative decades the spirit concentrates, esters folding into dried fruit, beeswax and a soft honey. The light spirit suits a wide range of cask finishes, from sherry to rum. It was a pioneer of wine cask finishing, working with Chardonnay casks back in the 1990s. The light, fruity make takes cask flavour well while keeping its apple and pear.

At 53.2%, undiluted, it is deep and fruity. A light, orchard fruit and toffee, with dried fruit, fig and walnut from the cask. The texture is light and clean, the fruit lifted by vanilla. The finish is rounded, fruity and clean. This is Glen Moray's clean, accessible Speyside style.
