Description
A Glen Moray of a 16 year old chosen by the bottler Best Dram, distilled in 2007, from cask 5698, bottled at 56.1%, one of 198 bottles. Glen Moray is a Speyside single malt from La Martiniquaise, light and approachable in style. Its light, fresh spirit suits a wide range of cask finishes, from sherry to rum.
The spirit was drawn off the stills for a clean, fruity Speyside spirit, building the fresh Glen Moray style. Maturation came in ex-Bourbon wood, the oak quiet behind the light spirit. At oxidative maturity aldehydes lend a nutty edge while ellagitannins add a gentle, drying grip over the fruit. The light, fruity make takes cask flavour well while keeping its apple and pear. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. A gentle maturation suits the light make, the orchard fruit growing richer with time.
At cask strength 56.1% it is full bodied. Green apple, honey and a gentle oak, with a soft vanilla from the oak. Beneath it run green apple, pear and a soft vanilla. The close is light and clean, fruit over a gentle oak. This is Glen Moray, a pioneer of cask finishing.
