Description
This Prosecco DOC is Freixenet's Italian sparkler, based on the Glera grape from the Veneto, the classic home of the style. It is made by the Charmat or tank method, running the second fermentation in stainless steel so the fresh, primary fruit is preserved rather than built into autolytic complexity. The dosage sits at Extra Dry, which leaves a touch more fruit roundness than a brut while keeping the wine bright and easy.
The wine is a light straw yellow with a fine, lively bead. The nose shows lemon, green apple and grapefruit over white flowers and a touch of citrus peel, while the palate is fruity and balanced with a pleasant freshness and a light, long finish. Serve well chilled at 6 to 8 degrees in a tulip glass to hold the bead. It is a natural aperitif and suits light starters, antipasti, fish dishes and seafood, and it also stands in as a base for a spritz over ice.
