Description
This Carta Medium Dry is Freixenet's off-dry cava, made from the three traditional Catalan grapes, Macabeo, Xarel-lo and Parellada, grown in the Penedes heartland north of Barcelona. It follows the traditional method with a second fermentation in bottle and time on the lees, which gives a soft toasted background, while a higher dosage in the demi-sec range pushes it towards a sweeter, more rounded style aimed at easy drinking and dessert service.
The wine is a bright straw yellow with a fine, steady bead. The nose shows apple, pear and white peach over a touch of honey and white flowers, while the palate is soft and gently sweet with a creamy feel and a clean, refreshing finish. Serve well chilled at 6 to 8 degrees in a white wine glass to balance the sweetness. It makes a good match for fruit desserts, light pastries and gently spiced dishes, and works as a softer aperitif for guests who prefer a rounder style.
