Description
Freixenet has made cava in Catalonia for more than a century and a half, and this Gran Cuvee Brut is a traditional-method sparkler in the house style. It rests on the three classic cava grapes, Macabeo for fruit and body, Xarel-lo for structure and character, and Parellada for freshness and finesse. The wine is refermented in bottle and rested on the lees, which builds the toasted bread and almond character that marks a proper cava out from tank fizz, with a brut dosage keeping the finish dry.
The wine is a bright straw yellow with a fine, steady bead. The nose shows apple, pear and citrus over toasted bread and a nutty, doughy note, while the palate is dry and balanced with a clean, fresh finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes a versatile aperitif and suits shellfish, white fish, salads and hard, nutty cheese.
