Description
Elyssia is Freixenet's upper range of cava, and this Gran Cuvee Brut steps away from the traditional Catalan grapes towards an international blend of Chardonnay and Pinot Noir. That choice gives a more Champagne-like frame, with Chardonnay bringing citrus and structure and Pinot Noir adding weight. The wine is made by the traditional method, refermented in bottle and given extended lees ageing, which develops the toasted and nutty complexity that sets it above entry-level cava, finished dry at brut level.
The wine is a bright gold with a fine, persistent bead. The nose shows apple, white peach and citrus over toasted bread, hazelnut and a doughy note, while the palate is structured and creamy with fresh acidity and a long finish. Serve at 8 to 10 degrees in a white wine glass. It works as an aperitif and pairs with shellfish, white fish, poultry and hard, nutty cheese.
