Freixenet makes Ice Rose in Spain as part of its Ice range, a rose sparkling wine designed to be poured over ice. It is built from Spanish grapes in a semi-dry Semi Seco style, and the dosage is set a little higher on purpose so the wine keeps its balance and fruit once ice cubes dilute it. That serving idea shapes the whole style: fresh, fruity and accessible rather than austere, at a moderate 11.5 per cent.
The wine shows a delicate salmon pink with a lively bead. The nose is fruity and open, with strawberry and red berries over a fine floral note. The palate is fresh and semi-dry, with juicy red fruit, a pleasant sweetness and a lively structure that holds up over ice. Serve well chilled in a large wine glass filled with ice, and a slice of grapefruit or a sprig of mint sharpens the fruit further. It suits summer salads, antipasti and fruity desserts such as a strawberry tart.
