Description
Freixenet is one of the largest Cava houses, and Elyssia Pinot Noir is a traditional-method rosé from Catalonia. The blend pairs Pinot Noir with the local Trepat, giving a fruit-forward, red-berried style with fresh structure. As with all Cava, a second fermentation takes place in bottle, and the wine spends at least twelve months on the lees, which adds complexity and a creamy edge to balance the fruit. A Brut dosage keeps it dry and versatile at the table.
The colour is a light rosé with a fine, lively perlage. The nose is intense, with ripe raspberry and red cherry to the fore. The palate is fresh, fruity and lively, with clear berry fruit, refreshing acidity and a harmonious, long finish. Serve well chilled at 6 to 8 degrees in a tulip glass or flute. It makes a versatile aperitif and pairs with antipasti, salads, light soups, fish and seafood.
