Description
Ferrari, run by the Lunelli family in Trentino, is Italy's benchmark traditional-method house. Maximum Blanc de Blanc is made entirely from mountain-grown Chardonnay, the meaning of the Blanc de Blancs name. It is produced by the traditional method, refermented in bottle and aged on the lees, which develops the toasted bread and almond character alongside the orchard fruit. The brut dosage keeps the wine crisp and dry, and the cool Alpine site preserves a bright line of acidity.
The wine is a bright straw yellow with a very fine, persistent bead. The nose shows green apple, white peach and citrus over toasted bread, almond and a doughy note, while the palate is fresh and precise with a clean, dry finish. Serve at 8 to 10 degrees in a white wine glass. It works as an aperitif and pairs with shellfish, white fish, poultry and hard, nutty cheese.
