An official release of Daftmill, a 13 year old, from 2010, at 46%, 6550 bottles in all. Daftmill is a cult Fife farm distillery, its small releases keenly sought after. The distillery runs only seasonally, in the quiet weeks of summer and winter between sowing and harvest.
The spirit was run through the distillery's small copper stills, giving the delicate, floral Lowland spirit. Ex-Bourbon casks held it, the gentle oak letting the delicate, fruity character lead. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Daftmill's restraint and patience are reckoned a model of the modern Lowland style. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus. The patient, restrained approach has made Daftmill one of the most sought after of the new distilleries.
At 46% it is gentle, sweet and fruity. Pear, lemon and a soft honey, with a soft vanilla from the oak. A green apple and a gentle spice lift it. The finish runs delicate, grassy and fresh. This is an elegant, grassy Lowland malt of real finesse.
