    An official Daftmill, an 11 year old, 2011, at 60.4%. Apple, pear and a soft honey over a clean body, with dried fruit, fig and walnut from the cask. Barley is grown on the farm itself, a true field to bottle malt. A light, elegant Lowland malt of real finesse. One of the smallest outputs of any distillery in Scotland. This is the patient farm malt of Fife.

    This official Daftmill, an 11 year old, from 2011, cask 095/2011, at 60.4%, 667 bottles in all. Daftmill, on a Fife farm, makes one of the smallest outputs of any distillery in Scotland. The patient, restrained approach has made Daftmill one of the most sought after of the new distilleries.

    Distilled slowly for a light, elegant Lowland spirit, for a light, floral make of real finesse. Maturation in an Oloroso cask laid dried fruit over the light, fruity malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the delicate body fuller and softer. A gentle maturation suits the light make, the fruit growing richer with time. The first whisky was not released until 2018, more than a decade after distilling began. The farm steading dates to the 18th century, the distillery built quietly into its old buildings. The light, elegant spirit takes cask flavour gently while keeping its grass and citrus.

    At its natural 60.4% it is concentrated. Apple, honey and a floral lift, with dried fruit, fig and walnut from the cask. The mouthfeel is light, the fruit carried on a clean body. The close is clean, fruit over a gentle oak. This is a refined Lowland single malt from a Fife farm.
