Description
This official Daftmill, a 10 year old, from 2012, cask 086/2012, at 57.7%, 341 bottles in all. Daftmill, founded in 2005, did not release its first whisky until 2018, after more than a decade in cask. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling.
It was made in copper stills from the farm's own barley, to build a clean, fruity, grassy character. A Pedro Ximenez cask added raisin, date and a treacle sweetness. By the integrating teens the spirit rounds out, ethyl esters building a clean orchard fruit over the grassy malt. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills. The light, elegant spirit takes cask flavour gently while keeping its grass and citrus.
Bottled at a cask strength 57.7%, it is rich. Lemon, green apple and a soft honey, with raisin, date and treacle from the cask. The mouthfeel is light, the fruit carried on a clean body. Apple, honey and a soft oak see out the finish. This is Daftmill, the cult farm distillery of Fife.
