Description
This official Daftmill, a 14 year old, from 2012, cask 002/2012, at 57.3%, 212 bottles in all. Daftmill is an elegant, restrained Lowland single malt of real finesse. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills.
It was drawn off the onion shaped stills of the Fife farm, for a light, floral make of real finesse. It rested in ex-Bourbon oak, the wood adding a light honeyed vanilla. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Long ageing turns the fresh lemon towards honey, apple and a soft spice. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath.
At cask strength 57.3% it is full bodied. Pear, lemon and a soft honey, with a soft vanilla from the oak. Soft orchard fruit and a floral honey sit behind the cask. The close is clean, fruit over a gentle oak. This is Daftmill's delicate, floral Lowland style.
