Water comes from a private well on the farm at Cupar in Fife. Daftmill is a tiny farm distillery in Fife, founded in 2005 by the Cuthbert brothers. This is a light, floral Lowland malt of real finesse.

A 14 year old Daftmill, a distillery bottling, from 2012, at 46%, 3475 bottles in all. Daftmill is a cult Fife farm distillery, its small releases keenly sought after. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling.
It was made in copper stills from the farm's own barley, for the light, elegant make Daftmill is known for. Maturation in an Oloroso cask laid dried fruit over the light, fruity malt. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper green apple and pear. Daftmill's restraint and patience are reckoned a model of the modern Lowland style. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus. Maturation in the gentle Fife climate keeps the spirit fresh and floral. A gentle maturation suits the light make, the fruit growing richer with time.
At 46% it is clean and soft. Pear, lemon and a soft honey, with dried fruit, fig and walnut from the cask. Soft orchard fruit and a floral honey sit behind the cask. Apple, honey and a soft oak see out the finish. This is a light, floral Lowland single malt.
