A 12 year old Daftmill from the distillery, at 46%. Lemon, green apple and a soft honey run through it. It distils only seasonally, between sowing and harvest on the working farm. Water comes from a private well on the farm at Cupar in Fife. The first whisky was not released until 2018, after more than a decade in cask. This is Daftmill’s delicate, floral Lowland style.

A 12 year old Daftmill, a distillery bottling, from 2008, cask see notes, at 46%, 6000 bottles in all. Daftmill was founded in 2005 by the Cuthbert brothers on their working farm near Cupar in Fife. The light, elegant make is a model of the classic Lowland style.
The spirit was drawn off the onion shaped stills of the Fife farm, building the restrained Daftmill style. A refill bourbon hogshead held it, keeping the light character to the fore. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. The light, elegant spirit takes cask flavour gently while keeping its grass and citrus. The distillery runs only seasonally, in the quiet weeks of summer and winter between sowing and harvest. The cool Lowland air gives a slow, even maturation in the farm dunnage warehouse. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath.
At 46% it is smooth and honeyed. Apple, honey and a floral lift, with a soft vanilla from the oak. Beneath it run lemon, green apple and a soft honey. The finish is light, fruity and clean. This is an elegant, grassy Lowland malt of real finesse.
