This official Daftmill, a 12 year old, from 2006, at 46%, 1665 bottles in all. Daftmill, on a Fife farm, makes one of the smallest outputs of any distillery in Scotland. It was founded in 2005 by brothers Francis and Ian Cuthbert, on their working farm at Cupar in Fife.
The spirit was worked through the small stills for a delicate, fruity make, for the light, elegant make Daftmill is known for. Ex-Bourbon casks held it, the gentle oak letting the delicate, fruity character lead. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Maturation in the gentle Fife climate keeps the spirit fresh and floral. A gentle maturation suits the light make, the fruit growing richer with time. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus.
Bottled at 46%, it is rounded. Pear, lemon and a soft honey, with a soft vanilla from the oak. The mouthfeel is light, the fruit carried on a clean body. The finish is light, fruity and clean. This is the light, elegant farm malt of Daftmill.
