An official release of Daftmill, a 13 year old, from 2006, cask 077/2006, at 56.9%, 213 bottles in all. Daftmill is a delicate, fruity Lowland single malt from a farm distillery in the heart of Fife. Maturation is mostly in ex-Bourbon casks, with a little sherry, in a dunnage warehouse on the farm.
Made in copper stills from the farm's own barley, for the light, elegant make Daftmill is known for. It rested in ex-Bourbon oak, the wood adding a light honeyed vanilla. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper green apple and pear. Maturation in the gentle Fife climate keeps the spirit fresh and floral. The light, elegant make is a model of the classic Lowland style. The light, elegant spirit takes cask flavour gently while keeping its grass and citrus. The onion shaped stills give a light spirit that ages with grace.
Bottled at a cask strength 56.9%, it is rich. Lemon, green apple and a soft honey, with a soft vanilla from the oak. It is delicate and fruity, the elegant spirit shining through. A long, honeyed finish carries a citrus lift. This is a clean, fruity Lowland single malt.
