An official Daftmill, an 11 year old, 2011, at 60.3%. Soft orchard fruit and a delicate, grassy citrus, with dried fruit, fig and walnut from the cask. One of the smallest outputs of any distillery in Scotland. Matured mostly in ex-Bourbon casks in a farm dunnage warehouse. This is a light, floral Lowland malt of real finesse.

An 11 year old Daftmill, a distillery bottling, from 2011, cask 100/2011, at 60.3%, 646 bottles in all. Daftmill is an elegant, restrained Lowland single malt of real finesse. The first whisky was not released until 2018, more than a decade after distilling began.
Distilled slowly for a light, elegant Lowland spirit, for the light, elegant make Daftmill is known for. A sherry butt held it, the wood lending raisin and walnut. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Vanillin and oak lactones from the wood lend vanilla and coconut over the floral malt. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch. The distillery runs only seasonally, in the quiet weeks of summer and winter between sowing and harvest. The light, elegant make is a model of the classic Lowland style.
At 60.3%, undiluted, it is deep and fruity. Grass, citrus and a gentle vanilla, with dried fruit, fig and walnut from the cask. Lemon, pear and a soft honey fill the middle. The finish is light, fruity and clean. This is Daftmill, the cult farm distillery of Fife.
