The Roots chose a single Oloroso sherry butt, cask 2367, for this 24 Years Old Cooley single malt, distilled in 2001 at the Co. Louth distillery and bottled for Italy in 2025 in a run of 180 bottles. Cooley, founded by John Teeling in 1987, double distills in the Scottish manner, and its unpeated malt takes long sherry maturation unusually well.

Nearly a quarter century in Oloroso turned the spirit deep and dark, fig, raisin and walnut wrapped around a sweet cooked grain heart, with an old fashioned estery note of polish running through it. Bottled at its cask strength of 51.9% without dilution, it shows the dark toffee and dried fruit of a full sherry maturation rather than a quick finish, closing long on nut and gentle spice.
