A single ex-bourbon barrel of 2002 Cooley, cask 2215, bottled in 2022 at 20 years old for a collectors event, 232 bottles at a cask strength of 57.1%. Cooley, founded in 1987 on its Co. Louth peninsula, double distills in the Scottish manner, and its 2002 casks have become a rich seam for single cask bottlings across Europe.
The barrel kept the profile classically Cooley, vanilla and lemon zest up front, then a husky cereal grip and sweet malt through the middle, with coconut and soft oak on the finish. At 57.1% it is vivid and direct, and water broadens the citrus into orchard fruit. Twenty years in one barrel, nothing added but time, a clean statement of what this distillery's malt does in American oak.
