Description
Chichibu is a small Saitama distillery started in 2008 by Ichiro Akuto, founder of Venture Whisky and heir to the Hanyu distilling family. The distillery ferments in washbacks built from Japanese mizunara oak, where native lactobacilli add fruit and a light incense note to the wash. Production is small, around a third of a million litres a year, with floor malting done by hand on occasion and every stage run under one roof.
This is unpeated single malt, matured in ex-bourbon American oak. By 7 years the spirit and oak have started to integrate, rougher notes softening as esters build into orchard and tropical fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. On the palate the Chichibu signature shows through: bright orchard fruit, a clean citrus lift and a thread of wildflower honey.
This bottling was distilled in 2017, from cask 8275 and bottled in 2025. It is a run of 180 bottles, an event release. Single casks like this are the heart of the Chichibu name, each one a different reading of the same young, fast matured spirit. Bottled at 65.8%, natural colour and not chill filtered.
