    Chichibu distillery in Saitama prefecture, founded in 2008 by Ichiro Akuto under Venture Whisky, has developed one of the broadest cask programmes of any Japanese craft distillery, with wine casks featuring alongside its better-known bourbon and mizunara wood. This UK market single cask was distilled in 2011 and bottled in 2018 by Speciality Drinks, seven years after filling.

    The Pinot Noir cask maturation sets this apart from the majority of Chichibu independent bottlings: red berry fruit, dried cherry and a wine-bright acidity are the anticipated contribution from the wood, worked into the distillery's naturally fruit-forward and energetic new make character. At cask strength 60.2% the spirit carries concentration and vibrancy. The UK release through Speciality Drinks reflects the appetite that British independent specialists have long shown for Chichibu single casks.
