Description
Ichiro Akuto built Chichibu in 2008 in a landlocked basin in Saitama, carrying forward a distilling line that ran back through the lost Hanyu distillery. Chichibu loses roughly three to five per cent of each cask a year to evaporation, near double the Scottish rate, so a young whisky here carries the depth of a much older one. The make is double distilled in copper pot stills built by Forsyths, from mostly unpeated barley, and matured on site in dunnage warehouses.
This is unpeated single malt, matured in Japanese mizunara oak and finished in French oak. Carrying no age statement, it leans on wood extraction, vanillin and oak lactones to the fore, with the basin climate pushing the spirit into the oak quickly. Mizunara lactones give sandalwood and a temple incense note, while French oak gives clove and a tannic spice. Chichibu's fruit led house character carries throughout, pear and honey balanced by a dry, oaky finish.
This release was drawn from the distillery's own stock and bottled in 2018. It is a run of 1357 bottles, released for France. Releases at this scale sell out quickly, which is part of why Chichibu has become one of the most traded distilleries in the world. Bottled at 57.3%, natural colour and not chill filtered.
