Description
Founded in 2008 by Ichiro Akuto, Chichibu has risen fast from a small mountain distillery to one of the most sought names in Japanese whisky. Production is small, around a third of a million litres a year, with floor malting done by hand on occasion and every stage run under one roof. The basin climate swings from humid summers near 35 degrees to winters below freezing, so the casks expand and contract hard and the spirit takes on wood faster than it would in Scotland.
This is unpeated single malt, matured in ex-bourbon American oak. Only 5 years old, it leans on early wood extraction, vanillin and oak lactones to the fore, though Chichibu's fast maturation gives it more weight than the age implies. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. Chichibu's fruit led house character carries throughout, pear and honey balanced by a dry, oaky finish.
This bottling was distilled in 2010, from cask 644 and bottled in 2015. It is a run of 210 bottles, released for Japan. Single casks like this are the heart of the Chichibu name, each one a different reading of the same young, fast matured spirit. At 59.7% it drinks well neat, with water settling the oak.
