The fast mountain maturation gives it depth beyond its years. Bottled at 62%, a run of 213 and released for Japan. A sought after Saitama release.

    Chichibu sits in a mountain basin in Saitama, northwest of Tokyo, where Ichiro Akuto fired the stills in 2008 under his Venture Whisky company. Chichibu loses roughly three to five per cent of each cask a year to evaporation, near double the Scottish rate, so a young whisky here carries the depth of a much older one. The distillery ferments in washbacks built from Japanese mizunara oak, where native lactobacilli add fruit and a light incense note to the wash.

    This is unpeated single malt, matured in ex-bourbon American oak. Around 6 years in, the fruit esters and the wood have married, and the accelerated ageing gives a depth a Scottish whisky might reach much later. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. Underneath the wood, the make keeps its clean, fruity core, green apple and stone fruit with a light floral edge.

    This bottling was distilled in 2008, from cask 198 and bottled in 2015. It is a run of 213 bottles, released for Japan. Each cask is bottled on its own terms, a snapshot of how a particular wood shaped the Saitama spirit. At 62% it drinks well neat, with water settling the oak.
