    Ichiro Akuto built Chichibu in 2008 in a landlocked basin in Saitama, carrying forward a distilling line that ran back through the lost Hanyu distillery. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest. Production is small, around a third of a million litres a year, with floor malting done by hand on occasion and every stage run under one roof.

    This is unpeated single malt, matured in ex-bourbon American oak. By 8 years the spirit and oak have started to integrate, rougher notes softening as esters build into orchard and tropical fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. The palate leans on tropical and orchard fruit, mango and apple, with a clean cereal note beneath.

    This bottling was distilled in 2012, from cask 2341 and bottled in 2020. It is a run of 191 bottles, an event release, bottled by La Maison du Whisky. From a distillery still in its first generation, bottlings like this show how far Chichibu has come in a short time. At 62.4%, best read neat first, then opened with a little water.
