The fast mountain maturation gives it depth beyond its years. Bottled at 65.2%, a run of 197 and bottled by La Maison du Whisky. A sought after Saitama release.

    Ichiro Akuto built Chichibu in 2008 in a landlocked basin in Saitama, carrying forward a distilling line that ran back through the lost Hanyu distillery. The distillery ferments in washbacks built from Japanese mizunara oak, where native lactobacilli add fruit and a light incense note to the wash. The basin climate swings from humid summers near 35 degrees to winters below freezing, so the casks expand and contract hard and the spirit takes on wood faster than it would in Scotland.

    This is unpeated single malt, matured in ex-bourbon American oak. Around 6 years in, the fruit esters and the wood have married, and the accelerated ageing gives a depth a Scottish whisky might reach much later. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. The body is medium and the fruit clear, baked apple and citrus peel running into a warm, lightly spiced finish.

    This bottling was distilled in 2014, from cask 3531 and bottled in 2020. It is a run of 197 bottles, an event release, bottled by La Maison du Whisky. Releases at this scale sell out quickly, which is part of why Chichibu has become one of the most traded distilleries in the world. Bottled at 65.2%, natural colour and not chill filtered.
