The fast mountain maturation gives it depth beyond its years. Bottled at 62.3%, a run of 246 and bottled by La Maison du Whisky. A sought after Saitama release.

    The Chichibu distillery was founded in 2008 by Ichiro Akuto, whose family had distilled at the closed Hanyu plant, and works on a small scale in the Saitama mountains. Water comes off the Arakawa river system, filtered through the surrounding mountains to a clean mineral balance that lets the fruit and oak show. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest.

    This is unpeated single malt, matured in an Oloroso sherry cask. At 10 years, old for a Chichibu, the long wood contact has built structure, ellagitannins giving a dry oak grip beneath the fruit. The Oloroso gives dried fruit and a walnut nuttiness. Chichibu's fruit led house character carries throughout, pear and honey balanced by a dry, oaky finish.

    This bottling was distilled in 2014, from cask 10416 and bottled in 2025. It is a run of 246 bottles, released for France, bottled by La Maison du Whisky. It is the kind of single cask that built the distillery's reputation among collectors in barely more than a decade. At 62.3% it drinks well neat, with water settling the oak.
