Description
Casa Vinicola Canella makes this millesimato from the steep Valdobbiadene DOCG hills, the top tier of the Prosecco zone, using the region's native Glera grape. It is made by the Charmat or tank method, where the second fermentation takes place in pressurised stainless steel rather than in bottle. Working at low, controlled temperatures and keeping the wine off oak preserves the grape's primary aromatics, its orchard fruit and floral character. Being a millesimato, the fruit comes from a single vintage, and the extra dry dosage leaves a touch more roundness than a brut while staying clearly fresh.
Expect a pale straw colour with green tints and a fine, steady stream of bubbles. The nose leads with green apple, pear and white peach over white flowers and a honeysuckle note, with a squeeze of lemon behind. The palate is light and lively, the gentle fruity sweetness of the extra dry style balanced by clean acidity and a soft mousse, closing crisp. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It makes an easy aperitif and suits light salads, white fish and delicate shellfish.
