Description
Casa Vinicola Canella works in the Veneto, and this bottling comes from Valdobbiadene, the steep hills at the top of the Prosecco pyramid that carry the Superiore DOCG. It is a millesimato, made from a single vintage of Glera rather than a multi-year blend, which gives it a clearer sense of the harvest. The wine is produced by the Charmat method, with its second fermentation in stainless steel tanks that hold on to the grape's floral, orchard-fruit character, and it is finished in the extra dry style with a touch of softening residual sugar. The magnum and gift box make it a natural choice for a celebration.
The colour is a bright straw yellow with a fine, lasting bead. The nose shows green apple, pear and white flowers with a light stone-fruit hint, and the palate is fresh and gently rounded, its ripe fruit set against a clean line of acidity through a lively finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It is a fine aperitif and pairs with antipasti, light salads, white fish and shellfish.
