Description
Casa Vinicola Canella, founded in 1947, sits in the Marca Trevigiana and specialises in Prosecco, and this bottling carries the top Valdobbiadene Superiore DOCG classification from the Conegliano hills, the highest tier in the Prosecco pyramid. It is made from 100 percent Glera and given its sparkle by the Charmat method, the tank fermentation that preserves the grape's fruity bouquet and produces a fine, particularly persistent perlage where a bottle ageing would build savoury weight instead. The dosage sits in an extra dry style at around 17 grams of residual sugar.
The colour is a brilliant pale yellow with an even, fine bead. The nose is fresh and playful, with green apple, orange, lemon and lime peel, and the palate is soft, balanced and naturally fresh with a long, persistent finish. Serve at 6 to 8 degrees in a white wine glass as an aperitif. It suits white fish, lighter shellfish and salads, and rounds off a meal with fruit based desserts.
