Description
Bottega produces this Gold Prosecco at its Villa Rosina winery in the Veneto, and the wine has become widely recognised as much for its mirrored golden bottle as for what is inside. It is a Millesimato, drawn from a single vintage, so the character of the harvest year reads clearly. The grape is Glera, the variety behind Prosecco's freshness and orchard fruit. Second fermentation takes place in pressurised tanks by the Charmat method, which preserves the primary aromatics and gives the wine its fine perlage rather than the bready character of bottle ageing. Finished Brut, it is drier and more restrained than the house's Extra Dry bottlings.
The colour is pale straw with a steady stream of small bubbles. The nose leads with green apple, pear and white blossom, lifted by a fresh citrus edge. On the palate it is lively and clean, the fruit framed by bright acidity and a balanced, lasting finish. Serve chilled at 6 to 8 degrees in a white wine glass or flute. It makes a natural aperitif and suits antipasti, prawns, fried fish and light summer salads.
