Description
DIAMOND is Bottega's Pinot Nero spumante in gift presentation, a Vino Spumante made from the black grape pressed pale and fermented as a white wine. Bottega uses the Charmat method, refermenting in pressurised tank to keep the fruit fresh and the aromatics primary. The Brut dosage finishes the wine dry, and vinifying Pinot Nero as a white gives a slightly firmer structure than a Glera-based fizz.
The colour is pale straw with a fine, persistent bead. The nose gives green apple, pear and white flowers, with a light red-currant note hinting at the grape and a touch of almond. The palate is crisp and light to medium bodied, with clean acidity and a dry finish. Serve well chilled at 6 to 8 degrees in a tulip glass as an aperitif, or with seafood, white fish and light starters.
