Description
This Bepin De Eto Superiore is finished Extra Dry, a touch sweeter than the family's Brut and Extra Brut, drawn from the steep hills of the Conegliano Valdobbiadene DOCG. It is a Millesimato from the 2025 vintage, made from Glera. Following a temperature-controlled first fermentation, the second fermentation takes place in pressurised tanks by the Charmat method, producing the elegant perlage and keeping the orchard and floral aromatics fresh. The Extra Dry dosage rounds the palate, its gentle sweetness set against the region's natural acidity for balance.
The colour is pale straw with fine greenish reflections and a persistent bead. The nose is fresh, with ripe apple, pear and delicate blossom over subtle citrus. The palate is harmonious and fruity, a pleasant freshness and finely balanced sweetness meeting a lively structure, the finish long and fruit-driven. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes a versatile aperitif and pairs with antipasti, prosciutto with melon, seafood, prawns and light fish.
