Description
Bepin De Eto is a producer in the Conegliano Valdobbiadene DOCG, the hillier heart of the Prosecco Superiore zone in Veneto, where steep slopes and cool nights sharpen the acidity in the fruit. This Millesimato is a single-vintage Prosecco made from Glera, presented in magnum for larger tables and gifting. It is a tank-method wine, with the second fermentation carried out in pressurised steel to preserve the fresh fruit and floral character rather than build autolytic weight. The Brut dosage keeps it firmly on the dry side, with the acidity left clean and lifted.
The colour is pale straw with a fine, persistent bead. The nose is fresh and floral, with green apple, pear and lemon over white peach, white flowers and a hint of elderflower. The palate is dry, crisp and lively, with a clean, animating finish. Serve well chilled at around 6 to 8 degrees. It works as an aperitif and alongside light salads, white fish and steamed shellfish.
