Description
This Bepin De Eto bottling takes the Conegliano Valdobbiadene DOCG in a drier direction, finished Extra Brut for a lower dosage than the house Brut. The fruit is Glera from the region's steep hills, a Millesimato drawn wholly from the 2024 vintage. It is made in the tank method, with a precisely managed second fermentation that gives the very fine, persistent perlage and an elegant structure. The low dosage puts the emphasis on freshness and precision rather than fruit sweetness, making a slender, energetic style pitched at the aperitif hour and the table.
The colour is pale straw with fine greenish reflections and a very fine bead. The nose is fresh and elegant, green apple and citrus over subtle blossom. The palate is slender and lively, well-integrated acidity carrying a clear, dry structure to a fresh, long finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It works as an aperitif and pairs with antipasti, carpaccio, oysters, grilled sea bass and light salads.
