Description
Asolo Prosecco Superiore is one of the two DOCG zones for Prosecco, covering the Asolo hills where Bedin has its estate. This Brut is made from Glera by the Charmat method, with the second fermentation in pressurised tank to preserve the grape's fresh, floral aromatics. Fruit from the higher DOCG hillsides tends to carry a little more definition and drive than plain Treviso Prosecco, and the Brut dosage keeps it dry.
The colour is pale straw with green tints and a fine, persistent bead. The nose offers green apple, pear and white peach, lifted by white flowers and honeysuckle. The palate is crisp and light bodied, with fresh citrus acidity and a clean, dry finish. Serve well chilled at 6 to 8 degrees in a tulip glass as an aperitif, or with seafood, white fish and light salads.
