Description
Nueve Tequila Blanco is a 100% Blue Weber tequila made in small batches from highland agave in the Los Altos region of Jalisco, the iron-rich red clay that tends toward fruitier, sweeter, rounder profiles. The brand was founded by Lilián Izchel Weller and Bastian Weller and built in partnership with a tequila master in Jalisco. The agave is left to ripen for eight to twelve years, longer than the five or six many growers allow, with jimadores cutting the leaves close to the piña using a coa.
The agave hearts are cooked slowly in brick ovens for fifty four hours, a gentle bake that avoids heavy caramelisation and lets the fruit soften. Fermentation runs over two days with natural yeast in stainless steel, followed by a double distillation. The spirit is reduced to 42% and bottled unaged, showing fruity agave with a touch of herbs and citrus, soft on the palate and clean through a warm finish.
