Cubical comes from the Williams and Humbert bodega in Jerez, a house better known for sherry that turns its precision to gin here. Distilled in small batches to the London Dry standard, it leans on a clear, classic botanical set, juniper, citrus, coriander and angelica root, with each run kept small enough to hold a tight, consistent character.
The nose is intense and clean, distinct juniper lifted by fresh lime and lemon peel, rounded by subtle florals and a pleasant coriander spice. The palate is smooth and well balanced, herbs, juniper and citrus in easy proportion. The finish runs long and dry, spicy coriander fading into lingering citrus freshness. Serve it slightly chilled or over ice in a simple G&T with a good tonic and a slice of lime, where its clarity reads best.
