Hayman's Royal Dock is a nod to the family firm's long history of supplying gin to the Royal Navy, where it formed part of the officers' rations and was bottled strong enough to survive a damp powder magazine. This navy-strength version lands at 57% vol., built on a classic frame of juniper, coriander and citrus peel with fine spices threaded through. The remarkable thing is how composed it stays at that proof.
The nose is intense juniper with fresh citrus and a subtle spice. The palate is powerful and complex, dominant juniper joined by coriander, citrus zest and a peppery warmth, before a long, warm, spicy finish with a pleasing dryness. It makes a formidable G&T with lemon zest, and brings real backbone to a Negroni; neat, give it a large ice cube to open up.
