    Hayman's is a name woven into the history of English gin, the family distilling for more than 150 years. This is their flagship London Dry, made in small batches and built the traditional way: a full 24-hour maceration of the botanicals before distillation, where many modern gins rush the step. The bill is a classic one, juniper, coriander, angelica root, lemon peel and cinnamon bark, tuned for balance rather than novelty.

    The nose is fresh and juniper-dominant, with citrus and fine herbs. The palate is dry and clean, juniper and spicy coriander to the fore, citrus freshness behind and a subtle peppery edge, closing long and soft with a lingering citrus note. This is a Martini gin first and foremost, but it makes an exemplary G&T too, with quality tonic and a simple lemon twist.
