Description
Yamazaki is Suntory's Osaka Prefecture distillery, Japan's first malt site, founded in 1923 in the damp valley where the Katsura, Uji and Kizu rivers meet. This 2000 vintage was drawn from a single cask at 13 Years Old and bottled in 2013 for an event, an undiluted expression rather than a blended core whisky.
Maturation was in a single Spanish oak Oloroso sherry butt, the wood that drives the house's darkest, fruitiest character. At 59% and undiluted it is deeply sherried, with raisin and dried fig, dark chocolate and warm spice carrying the distillery's orchard fruit beneath. Concentrated and full, it rewards a little water and patience to open the layered, dark fruited sherry character typical of Yamazaki's Spanish oak single cask bottlings.
