Description
This 1996 Yamazaki was distilled by Suntory at its Osaka Prefecture distillery, Japan's oldest malt site, where soft humidity and three converging rivers in the Shimamoto valley aid maturation. Bottled in 2011 at 15 Years Old for the Japanese market, it is a single cask at full strength, distinct from the blended consistency of the core range.
Maturation was in a single Oloroso sherry butt, the wood behind Yamazaki's deeper expressions. At 59% and undiluted it offers dried fruit and dark chocolate, a touch of leather and warm spice, all carrying the distillery's orchard fruit underneath. Rich and well integrated for its age, it shows the balance between fruit and sherry the house aims for in its older sherried malts.
