Navy Island's Pedro Ximénez Sherry Cask Finish takes a Jamaican base and rounds it out in casks that once held the sweetest of sherries, the PX adding a dried-fruit richness over the island spirit. Bottled at navy strength and without added sugar, it balances that sherry influence against the rum's own freshness.
The nose mixes fruity, raisined and floral notes with a citrus lift, the PX dried fruit meeting brighter aromatics. The palate brings dried fruit, a fresh, almost agricole-like grassiness, citrus and oak, and the finish settles into honey, leather and walnut. Bottled at 46%, it is approachable in strength while the sherry cask lends weight and dark-fruit depth. Despite the famously sweet cask it is recorded as unsweetened, the richness coming from the wood rather than dosage.
