Description
Foursquare ECS X 2007 is a vintage release in the ECS range, the limited annual run from Richard Seale that has set a benchmark for aged Caribbean rum. It is a single blended rum, the Bajan marriage of double-retort pot still and column still distillate from one distillery, distilled in 2007 and bottled at twelve years and full strength with nothing added.
Matured entirely in ex-bourbon oak, it shows the textbook Foursquare profile: coconut, vanilla and caramel over bourbon oak, with dried fruit and baking spices and a dry, woody, coconut-edged finish. Tropical ageing in Barbados gives the wood real presence in a dozen years, and the no-additives, no-sugar approach keeps the spirit honest. At 59% it is rich yet controlled, a safe and rewarding step up for anyone who already enjoys the ECS releases or bourbon, best sipped slowly with a little water if wanted.
