    An unpeated Chichibu single malt from Saitama, 7 Years Old, matured in ex-bourbon American oak, distilled in 2017. Fruit led, all vanilla, coconut and honey. The fast mountain maturation gives it depth beyond its years. Bottled at 61.4%, a run of 219 and bottled by La Maison du Whisky. A sought after Saitama release.

    Chichibu sits in a mountain basin in Saitama, northwest of Tokyo, where Ichiro Akuto fired the stills in 2008 under his Venture Whisky company. Water comes off the Arakawa river system, filtered through the surrounding mountains to a clean mineral balance that lets the fruit and oak show. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest.

    This is unpeated single malt, matured in ex-bourbon American oak. By 7 years the spirit and oak have started to integrate, rougher notes softening as esters build into orchard and tropical fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. On the palate the Chichibu signature shows through: bright orchard fruit, a clean citrus lift and a thread of wildflower honey.

    This bottling was distilled in 2017, from cask 14329 and bottled in 2025. It is a run of 219 bottles, an event release, bottled by La Maison du Whisky. Each cask is bottled on its own terms, a snapshot of how a particular wood shaped the Saitama spirit. Bottled at 61.4%, it rewards a drop of water to open the fruit.
