The fast mountain maturation gives it depth beyond its years. Bottled at 59.5%, a run of 202 and bottled by The Whisky Exchange. A sought after Saitama release.

    In the Saitama mountains northwest of Tokyo, Chichibu has made malt whisky since 2008 under Ichiro Akuto and his Venture Whisky company. Water comes off the Arakawa river system, filtered through the surrounding mountains to a clean mineral balance that lets the fruit and oak show. The distillery ferments in washbacks built from Japanese mizunara oak, where native lactobacilli add fruit and a light incense note to the wash.

    This is unpeated single malt, matured in ex-bourbon American oak. Around 8 years in, the fruit esters and the wood have married, and the accelerated ageing gives a depth a Scottish whisky might reach much later. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. The palate leans on tropical and orchard fruit, mango and apple, with a clean cereal note beneath.

    This bottling was distilled in 2013, from cask 2666 and bottled in 2022. It is a run of 202 bottles, an event release, bottled by The Whisky Exchange. Single casks like this are the heart of the Chichibu name, each one a different reading of the same young, fast matured spirit. Bottled at 59.5%, natural colour and not chill filtered.
